The Bread

All our sourdough breads are naturally leavened and are
created from the same simple ingredients - water, flour,
sourdough starter and sea salt.

Our sourdough starter is fermented naturally and is fed
twice daily. It contains flour and filtered water.

Our bread contains no commercial yeast or preservatives
and is gently mixed and hand shaped before being given
a lenghty fermentation in our retarder. They are then baked
on the stone hearth of our radiant gas oven each night
fresh for delivery 7 days a week.

We always use the best quality flour we can source. This
is most often, but not always, organic and may vary due
to the availability of Australian organic wheat. Our goal is
to supply our valued customers with a consistantly high 
quality, naturally leavened genuine sourdough bread.

Sonoma sourdough is available from Sonoma's bakery
cafes plus many of Sydney's fine food provedores; and
its best café's and restaurants including Tetsuya's, Aria,
Quay, Est, Pier and Icebergs Dining Room and Bar.
